It all sounds and looks so AWESOME!! I'm not a Sleepy Hollow fan, but ooh I want that covered bridge!

During Family Gamer TV's toybox showcase video below, you can see an Infinity base near Flynn's arcade in the toybox. Surrounding the base are 7 spots for playset game pieces, you can see the Inside out, Twilight of the Republic & Rise of the Empire pieces on the lower section, 2 empty spaces to the left and right of the base and above what looks like either two more empty spaces or possibly two short clear round pieces that may or may not be the 2 toybox expansion games.
Now the game is currently in beta mode here so many things are not final, but this could point to 5 playsets and 2 Toybox Expansions games as the total we will see in 3.0's lifecycle.

The BH6 Sushi Cat is from Baymax and Hiro's first flight, Baymax basically flies under the swinging knife

Unidentified Male Townsperson that is the host of the Main Street section of Toy Box hub, possibly Walt Disney???

Where's the Grunkle Stan hot air balloon? I haven't seen it, @Ben.

It was in the background on one of the stills. I saw that too.
