Again, the KH thing isn't "Couldn't figure out" it's that it cost way too much time/money to implement it first time round. Animal versions of all the characters required totally new animations and mechanics, all of which are easy to figure out, but cost far more than just making a new level that humanoid Sora/Donald/Goofy can all use as standard.
It's the same in DI. It'd be easy to figure out a way to put non humanoid characters in the game, but they'd have to add a ton of content and new gameplay mechanics to make them work. Look at Randall as and example. He's got six legs, but he also has two arms, so even though he's clearly not a standard human shape, he can fit on all the vehicles and use all the tools without many problems. Simba doesn't have any hands so he can't use any of the tools or vehicles. He won't be able to climb rope ladders, but he'll probably be able to climb and hang off ledges (some characters like Mufasa obviously won't have the ledge hanging ability). It's just a ton of extra work to pile on top of all the other stuff they have to work on.
Yes, now you can say "But they put the Cars guys in and they can't use all the tools and vehicles!" It was far easier making the specialist Cars playable because they already had a full set of vehicle mechanics in the game. It was a relatively small amount of work to just turn a bunch of regular vehicles that already fully worked into standalone playable characters.
I have no doubt that non humanoids and swimming will come eventually, but they will likely come in later sets as those sets' selling points to justify their extra development costs.
